Contemporary seafood (this time, we use prawns and squid)
200g Brussels sprout
200g Cheese for pizza
50g Parmesan cheese
2 Tbsp Cooking sake (or white wine plus pinch of sea salt)
Garlic powder
Salt & Pepper (for those who want)
<Methodology>
1. Clear the seafood
Dice the seafood and marinate with cooking sake in a small bowl for half-hour. (for those who don’t have cooking sake, alternatively you should use white wine and salt).
2. Grill
Preheat the oven on 200C. Unfold the pizza cheese over a non-stick oven parchment and lay the seafood evenly. Scatter Parmesan cheese and garlic powder (and salt & pepper) on high and cook dinner for quarter-hour within the oven. Warmth right down to 130C and cook dinner for 20 minutes till the cheese is crispy.
