Our native yōshoku restaurant, Fuji Lunch, has Western-style dishes like karaagé fried hen, croquettes, hamba-gu (extra like meatloaf than a hamburger), and fried cutlets. Behind the counter an aged couple are choreographed of their actions relying on which orders they have been filling. Auntie saved busy topping a big plate with julienned cabbage, lettuce, cucumbers, and tomatoes. Uncle was manning the range both frying hen and onion rings or sautéing inexperienced bell peppers stuffed with floor meat.

Yōshoku is Western dishes tailored to the Japanese palate. It’s consolation meals. Rice is served on a plate and never in a bowl. We name this raisu, not gohan which is when it’s served in a bowl.

Fuji lunch appears like an American diner. A handful of counter seats overlooking an open kitchen and some tables. Hours are solely 11 a.m. to 2 p.m. The rice parts are big. I requested for a small serving and even that was exhausting to complete.
